A different take on an all-time classic – scrambled eggs served in a tortilla! Of course with all the other regular ingredients: onion, beacon and hard cheese.

Ingredients

– 1 Graham Dijo wheat tortilla
– 2 eggs
– 3 slices of beacon
– 2 slices of any hard cheese
– 1 tablespoon of red onion (finely diced)
– 1 tablespoon of red pepper (finely diced)
– chives (season to taste)
– extra-virgin olive oil (season to taste)
– Tabasco sauce (season to taste)

Preparation guidelines

1st step

 

Melt a stick of butter on the pan; fry the red onion on the butter until its gets golden brown; beat the eggs and add pour them on the pan; fry until fluffy.

2nd step

 

Put the scrambled eggs on the Dijo Graham tortilla, add beacon, hard cheese, red onion, and chopped chives. Season to taste with olive and Tabasco sauce.

3rd step

 

Fold the tortilla into a classic wrap (see: wrapping course).

4th step

 

Preheat the frying pan (do not add any oil!); fry the tortilla wrap until it gets crisp brown on both sides.
