Ingredients

– 200 g of rice noodles
– 8 Dijo Wholegrain tortillas
– 2 eggs
– 1 chicken breast fillet
– 2 tablespoons of soy sauce
– 3 scallions (the white and the green part)
– 2-3 tablespoons of fish sauce
– a bunch of coriander
– 2 tablespoons of brown sugar
– 2 tablespoons of peanuts (unsalted!)
– sesame oil

Preparation guidelines

1st step

 

Cut the chicken breast fillets into strips, put them into a bowl, pour soy sauce in and stir.

2nd step

 

Soak the rice noodles in hot water for about 5 minutes; strain them.

3rd step

 

Heat up oil on a wok (or any other sufficiently large frying pan), add whisked eggs and fry them until they form a thin omelette; put it on a cutting board, roll it and cut it into strips.

4th step

 

Put the chopped white part of the scallions on the frying pan. Add the chicken and fry, stirring all the time.

5th step

 

When the chicken is ready, add peanuts and brown sugar. Fry until the chicken strips caramelize lightly. Add fish cause, soy sauce, and rice noodles. Fry for a few minutes; add the omelette strips and the chopped green part of the scallions.

6th step

 

Sprinkle with sesame oil; put it straight out of the wok – while the dish is still hot – onto a preheated Dijo Wholegrain tortilla; wrap the tortilla tightly. Serve hot.
