1st step

 

Wash the salad rocket and drain it; wash the cherry tomatoes and cut them in halves.  Put the ingredients in a glass bowl.

2nd step

 

Cut the cheese into slices about 0.5cm thick. Sprinkle with olive oil. Heat up a grill pan and grill the cheese slices. When ready, add the grilled cheese to the salad.

3rd step

 

Pour olive oil, honey, and Dijo Balsamico Classic sauce into a small bowl, add mustard. Stir thoroughly and pour it on the salad.

Sponge cake:
– 50 g of wheat flour
– 10 g of cocoa
– 60 g of powdered sugar
– 3 eggs
– a pinch of salt
– 2 tablespoons of cold water
– ½ teaspoon of baking powder

– 750 g of thick Greek yogurt
– 1 packet of citrus flavor gelatin
– 200 ml of cold water
– 1 tablespoon of vanilla sugar
– 100 g of Dijo Strawberries in gel

Preparation guidelines

1st step

 

Sponge cake: preheat the oven to 180°C. Separate the egg whites from the yolks, beat them with a pinch of salt to stiff peaks. Add sugar and beat the whites again. Separately add the egg yolks, mixing briefly after each one. Add cold water and sifted flour with baking powder and cocoa. Stir lightly until uniform. Put baking paper on the baking mold and pour the batter into it. Even out the surface of the batter. Bake the sponge cake for about 30 minutes.

When cool, take the cake out the mold, using a sharp knife to separate it from the sides of the mold. Take the baking paper out, and cut the cake horizontally into two thinner layers.

2nd step

 

Yogurt filling: dissolve the citrus flavor gelatin in 200ml of hot water and leave it to cool. Mix the yogurt with vanilla sugar. When the gelatin cools down, add a few tablespoons of yogurt, mix and pour the gelatin in the yogurt mixture. Mix or stir all the ingredients together. Put one of the sponge cake layers in a form with baking paper. Put the yogurt mixture on the sponge cake. Refrigerate the cake until it sets (for a few hours).

3rd step

 

When the cake sets, put a thin layer of Dijo Strawberries in gel on top and refrigerate again.

– 200 g of wheat flour
– 100 g of butter
– 50 g of powdered sugar
– 1 egg yolk
– 2 tablespoons of cocoa
– 2 teaspoons of instant coffee
– 1 teaspoons of potato starch for sprinkling

– 250 g of mascarpone cheese
– 100 g of Greek yogurt
– 50 g of sugar
– 2 eggs
– 20 g of potato starch
– 3 teaspoons of instant coffee + 2 tablespoons of hot water

1st step

 

Crispy base: sift starch, cocoa, and powdered sugar, add coffee, butter, and egg yolk; chop the ingredients with a knife and quickly knead into a smooth dough. Wrap with plastic foil and refrigerate for 30 minutes. Spread butter on the tart ramekin. Roll out the dough on a sheet of baking paper and put it into the ramekin with the dough facing down; gently take the baking paper off (the dough should fill the bottom and the sides of the ramekin). Prick the dough all over with a fork, put it into an oven preheated to 175°C and bake for 20 minutes (until it gets light brown). Take the tart base out the oven and cool it.

2nd step

 

Coffee filling: brew the coffee in two teaspoons of hot water; cool the brewed coffee. Mix the mascarpone cheese, add eggs – after adding each egg, mix briefly.Stir the yogurt together with sugar and brewed coffee. Sift potato starch and add it into the mascarpone cheese; add yogurt and mix together.

3rd step

 

Tart: sprinkle potato starch over the tart base and lightly spread it with your hand. Pour the coffee filing on the tart base – it should almost reach the ramekin sides. Carefully place the ramekin into the oven and bake in 175°C for about 35 minutes (until the filling at the center of the tart is ready) When cool, pour Dijo Milk chocolate sauceon top and refrigerate overnight.

1st step

 

Boil the milk with vanilla bean; take out the vanilla bean, scrape its seeds, and put it back into the milk.

2nd step

 

Whip the egg yolk with sugar until creamy; slowly add hot milk while stirring.

3rd step

 

Put the cream into a pot and heat it up to 85°C – until it gets slightly denser.

4th step

 

Add gelatin and cool the cream down in a cold water bath, stirring from time to time with a beater.

5th step

 

After the cream cools down, put it into cups and refrigerate it until it sets; before serving, pour the Dijo Berry mix over the top.

3rd step

Meringue: OR READY-MADE MERINGUE DISCS
– 140 g egg whites (about 4 egg whites)
– 140 g of superfine sugar
– 140 g of powdered sugar

– 4 egg yolks
– 100 g of superfine sugar
– 100 ml of milk
– 1 vanilla bean
– 300 ml of whipping cream (30-36% fat)
– Dijo Strawberry sauce

1st step

 

Preheat the oven to 120°C (don’t use a convention/fan oven!).

2nd step

 

Put baking paper on the baking tray.

3rd step

 

Beat the egg whites to firm peaks, slowly add sugar, and continue beating – until the ingredients are completely mixed together (to stiff peaks).

4th step

 

Sift powdered sugar and slowly add it to the whipped egg whites, stir lightly.

5th step

 

Spread the whipped egg whites on a baking tray (form a disc).

6th step

 

Put the baking tray into the oven, leave the oven door ajar and bake for about 2 hours; turn of the oven and leave the meringue base to cool.

7th step

 

Beat the egg yolks with sugar until fluffy.

8th step

 

Slice down the vanilla bean and scrape the seeds, add them to the milk and boil it.

9th step

 

Slowly add the hot milk to the egg yolks and continue beating, until the mixture starts to thicken.

10th step

 

Take the mixture off heat and pour it into a bowl; continue beating in a cold water bath (with ice) until it cools down.

11th step

 

Whip the cream into firm peaks and gently stir it with the cold egg mixture.

12th step

 

Put baking paper on the sides of a springform pan. It should stick out over sides slightly. Put the meringue base on the pan and pour mixture on top.

13th step

 

Refrigerate for at least 8 hours – preferably overnight.

14th step

 

Serve with Dijo Strawberry sauce.

Put paper liners into a muffin mold; put the batter into each liner and put 1 teaspoon of Dijo Toffee filling on top.

6th step

 

Sprinkle with almond flakes.

Bake in an oven preheated to 180°C for about 20 minutes.
